What are pakku gohan?

There are two types of pakku gohan. The first is where the rice is put into an airtight container, cooked and then put in sterilized packaging. The second is where the rice is cooked first, then put in airtight container and sterilized packaging and then pressure and heat sterilized.
Rice in sterilized packaging is known as sterilized pakku gohan, and pressure and heat sterilized pakku gohan are known as retort pouch rice.
In recent years, pakku gohan have become known in the mainstream for their great taste. Retort Pouch rice is used as emergency rations, as it has a long shelf-life, as well as a preserved food and in the outdoors. Most pakku gohan are of white rice. As you can easily cook it in the microwave, it’s also known as microwavable rice.

  • *1: HTST is when sterilization occurs at 105 to 140℃ for a few minutes using pressure heating equipment.

Pakku gohan Recipe

Salmon Sesame Onigiri
(For 2 Onigiri)

Ingredients:
  • 1 Pakku Gohan
  • 1 slice Salmon
  • to taste Salt
  • 1 tablespoon White sesame seeds
  • to taste Herbs (dill etc.)
  • to taste Pickled plum (if available)

Instructions:
  • Heat the Pakku Gohan in the microwave according to the instructions.
  • Grill the salmon and flake it roughly.
  • Mix the rice with the flaked salmon, white sesame seeds, and salt. Shape the mixture into triangles and top with additional salmon and herbs.

TERIYAKI RICE Plate
(Serves 2)

Ingredients:
  • 1 piece Chicken thigh
  • to taste Salt and pepper
  • 1/2 head Broccoli
  • (A)1/2 tablespoons Soy sauce
  • (A)tablespoons Honey
  • (A)1 clove Grated garlic
  • 1 stalk Green onion
  • 1/2 piece Red onion(cut
  • to taste Fried onions
  • 2 Pakku Gohan

Instructions:
  • Season the chicken with salt and pepper. Cut the broccoli into small florets and lightly boil them in salted water.
  • Heat some oil in a frying pan over medium heat, and cook the chicken for a total of 10 minutes, browning both sides. Peel and cut the red onion into wedges, then add them to the empty space in the frying pan and cook until tender, seasoning with salt and pepper. Once the chicken is cooked through, add ingredients (A) and coat the chicken with the sauce.
  • Heat the Pakku Gohan in the microwave according to the instructions.
  • Place the cooked rice in a bowl and shape it into a mound on a plate. Top the rice with the chicken, broccoli, diagonally sliced green onion, and red onion. Sprinkle with fried onions.

Chirashi Sushi
(Serves 2-3)

Ingredients:
  • 2 Pakku Gohan
  • 50g Pickles
  • 30g Cooked beans
  • 4 pieces Mushrooms
  • 10g Butter
  • to taste Salt and pepper
  • 5 sticks Imitation crab sticks
  • 1 Egg
  • 1 teaspoon Sugar
  • to taste Finely chopped green onion

Instructions:
  • Finely chop the pickles. Slice the mushrooms thinly and sauté them in butter, seasoning with salt and pepper. Shred the imitation crab sticks. Beat the egg with the sugar, make a thin omelet in a frying pan, and cut it into thin strips.
  • Heat the Packku Gohan in the microwave according to the instructions.
  • Mix the hot Pakku Gohan with the pickles, mushrooms, and beans.
  • Top the rice mixture with the shredded imitation crab sticks and egg. Sprinkle with finely chopped green onion.
